Vietnamese noodles with veggies. ~fresh beautiful meal

Vermicelli noodles.
Served with veggies, baked sweet chilli tofu, chilli miso sauce, crushed peanuts, sliced chives and fresh chilli.
Slices of lime on the side

[ Veggies used: steamed kale, raw bean sprouts, raw julienne sliced carrot, spiralized raw white zucchini, fresh coriander (cilantro) ]

** I only use gmo-free tofu. If you wish to avoid tofu – I suggest replacing this with baked sweet potato.
