As you know I live in tropical El Salvador, always so hot, so even as a dinner I really enjoy to eat fresh salads!! And in my country we can eat beans all day long! with rice, fried, in soup, and the list goes long….
So here is how I treat myself and my mom! So we both feel that we are on Saturday even if is just Monday….
Fresh avocado, sweet corn, cherry tomatoes, black beans, and cilantro, add lemon dressing, i Just dip with chips Enjoy!
I really enjoy eating this weekly! so does my mom!! Easy to make and so yummy!
Summer Salad! Corn, avocado and beans salad:
- 1 3/4 cup sweet corn
- 40 cherry tomatoes, halved
- 1 15 oz. beans
- 2 avocados, diced
- 1 red onion, finely diced
- 1/4 cup cilantro, chopped
- 1 lemon
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
Prep all the veggie ingredients and add them to a large serving bowl. Toss well to combine.
In a small bowl or measuring cup, whisk together the dressing ingredients and pour over the veggies. Toss gently to coat evenly and let rest about 10 minutes.
Store in the fridge and serve alone, with chips,
