Greek yogurt! For breakfast. 

INGREDIENTS
1 cup seasonal fruit, chopped Summer: mix of berries or peaches Fall: pears, plums Winter: apples, oranges Spring: Rhubarb, kiwi ½ cup water or apple juice 3 tablespoons chia seeds 1 teaspoon vanilla extract 1 cup full fat greek yogurt Optional toppings: puffed quinoa, granola, or toasted nuts
INSTRUCTIONS

Place the chopped fruit, apple juice or water, chia seeds, and vanilla in a heavy bottom pan over medium heat. Bring the mix to a simmer and stir until thickened, about 10 minutes. Remove from heat and cool completely.

Grab a glass jar or regular tall drinking glass and layer the parfait, starting with the jam, then the yogurt, alternating them. Top with jam and puffed quinoa, granola, or toasted nuts. Yum!
