for the burritos-

8 frozen bean & cheese burritos {such as El Monterey}

1 cup fat free sour cream

1 7-oz. can diced green chiles

salt & pepper, to taste

1/2 teaspoon lime zest

2 tablespoons lime juice

1/4 teaspoon cumin

1/2 cup loosely packed cilantro

1 1/2 cups grated monterey jack cheese

for the corn-

1 10-oz. package frozen corn & butter {such as Green Giant}

1/2 red bell pepper, finely diced

3 tablespoons chopped cilantro

juice of 1 lime

salt & pepper, to taste


Lightly grease 9×13 glass baking dish with non stick cooking spray. Place 8 frozen burritos into pan and microwave 8 minutes or until all burritos are hot. Preheat broiler.

While burritos are warming, place sour cream, green chiles, salt, pepper, lime zest, lime juice, cumin and cilantro into a blender. Pulse and then blend until smooth. Spoon generously over warm burritos. Sprinkle with cheese. Place under broiler 2-3 minutes or until cheese is melted and burritos are all warm and bubbly. Serve.

For the corn- microwave according to package directions. Stir in red pepper, cilantro, lime juice, salt and pepper. Serve with burritos.
